Food  Diary: Monday Night Dinner - Turkey sandwich on a plantain - plain  turkey breast, tomato, lettuce, colby-jack cheese, SCD friendly dijon. I  usually eat one plantain a week. I’m really liking these sandwiches. Tuesday Night Dinner - Lettuce wrapped chicken tacos using the Slow  Cooked Chicken for Tacos recipe on my website. Also black beans, with  pico, cheese, and plain yogurt.

Food  Diary: Sunday Night Dinner - Veggie Pizza (zucchini crust with  Parmesan, onions, peppers, pineapple, sundried tomatoes. I used fresh  tomato instead of sauce.

Food  Diary: Friday Night Dinner (and Saturday also) - Stuffed Chicken  Breast; steamed broccoli, carrots, and cauliflower; roasted delicata  squash.

Food  Diary: Thursday Night Dinner - Burger with plantain bun with kale  chips. Grass fed beef, with sharp cheddar, baby butter lettuce, SCD  legal dijon, organic ketchup (not SCD - sweetened with agave), on a  plantain “bun.”

Food Diary: Tuesday Night Dinner - Chicken noodle soup - made with home made chicken broth, and quinoa pasta. Quinoa pasta is not SCD legal and is made with quinoa and corn flour. I don’t normally eat corn, but I’ve found if I keep to every once in a while I’m fine (like maybe once every couple of months or so). Also a tuna melt, with SCD safe tuna, colby-jack cheese, and one of my olive oil biscuits.
